This was another day where I did not eat before class. Luckily (especially since we went to the farms) it did not seem to effect how I felt. I think that the water I kept drinking during the trip might have saved me.
After the trip I went home and actually ate the leftover Iguana Grill food that I had. It wasn't much, so I also had a tomato and mayonnaise sandwich. I ate this alone in my apartment. At 6:00, I went to work.
After work, Tim and I went over to our friend's (Kristin and Marcus) apartment for dinner and to hang out. Kristin made a Broccoli and cheese casserole with rice which was very good. I drank water with it. We all ate together while talking and playing games. We are all really good friends, and being couples, we tend to get together a lot. Tomorrow night, they will be coming over to my place to eat and hang out with us again. This is probably what I look forward to the most- cooking with my boyfriend for our best friends.

On this day, I had an early lunch with my boyfriend and one of our friends. Our friend, having traveled from Birmingham to see us for the weekend, suggested that we all go get lunch on his way out of town. So, we went to Iguana Grill. I really like Iguana Grill as far as Tuscaloosa Mexican restaurants go. I ordered one taco, one burrito (just beans), and rice and beans on the side. I drank water. I also munched on the chips and salsa while waiting. I thought this meal was good… I always enjoy going out to eat with people.
For dinner I had my Bento leftovers from the night before. For something sweet after, I had a Moonpie. I ate these alone at my apartment.
I noticed that his day's meal was not particularly healthy- a lot of fast restaurant food. I wonder that if I had noticed this while choosing what to eat, if I would have changed my mind, hm.

On this Saturday, I did not have any kind of breakfast. The first thing I ate (around 11:00) was a tuna fish sandwich with Sunchips. This was mostly a pre-pool snack since my boyfriend and I had plans to be by the pool for the afternoon. While at the pool, I sipped on a mixed drink I made- pineapple Malibu, strawberry champagne, orange juice and pink lemonade. This is what I usually make for pool days. It’s tropical and fits the scene well!
Before I had to go to work, I quickly munched on a Pop Tart. After work, I ordered Bento to go. My boyfriend came into Bento with one of our friends and ate, so I decided I’d get Bento as well. I love Bento so much but am trying not to eat it too often… I felt like this was an excuse! Plus, I needed something quick for dinner that night that I wouldn’t have to make because Tim and I were having friends come over to his apartment to hang out. So, I ate my Bento Teriyaki Vegetarian dinner at Tim’s apartment just before people started to arrive. The dinner consisted of zucchini, mushrooms, broccoli, and onions sautéed in a teriyaki sauce, edamame, and fried rice and shrimp sauce. Plus, it came with a soup and salad. I drank a Kronenbourg beer with it. No complaints about this meal- it’s Bento!

For lunch I made another fish fillet with a baked potato. The Potato was from Wal Mart (not sure of anywhere before that), and I added butter, and salt and pepper to it. I enjoyed this meal, it was very light but just enough for how I was feeling at that time. I ate it alone (1:00), once again, watching tv. I drank pink lemonade drink mix with it.
For dinner I met up with my friend Marion (7:00). We met at Buffalo Phils on the strip. This is not my favorite restaurant, but she and I used to go there often so we decided to do it again since she might be leaving soon. I had the chicken winger (just chicken fingers) dinner with fries and a side of broccoli and cheese casserole. I drank water.

As usual, I did not have anything for breakfast on this morning, and I also did not eat lunch until very late. It was more like an early dinner. I slept in longer than usual because I had a bad headache. I finally felt like eating around 2:00. I made myself lunch- black eyed peas (canned), one Tilapia fillet (frozen, from Wal Mart), with a salad made from the rest of the mixed greens from Snows Bend Farm. I just heated the peas in a pot, added salt and pepper. I baked the fish in the oven. I added sliced carrots and Italian dressing to my salad and was a little disappointed that I didn't have anymore tomato to add as well! I was glad that I had the time to "make" this meal, even though the black eyes peas were canned. It was a much better option than a frozen dinner.
I had work from 4:30-10:30, but luckily my boss fed us tonight after we closed. So, I had teriaki chicken, edamame, and fried rice with Bento's shrimp sauce. I was VERY please with eating this mostly because (as I have said) I love Bento's food, it was free, and it meant I wouldn't have to make something quickly when I got home. While at work I drank watered down sweet tea. I wanted sweet tea just to help me stay alert and added water to it so it wasn't SO much sugar.
I had work from 4:30-10:30, but luckily my boss fed us tonight after we closed. So, I had teriaki chicken, edamame, and fried rice with Bento's shrimp sauce. Before class I had a tomato and mayonnaise sandwich. Made with the usual- same tomato, kraft mayo, salt and pepper and white bread. I also had a Pop Tart before it, to help me sweet-something craving. I drank a glass of whole, D milk with it.
I also ate the wonderful salad and meal that our class had with Chef Dave at University Club! Most definitely the highlight food of my day. It was especially nice to be eating with classmates, as we were all exploring and learning about the benefits of local foods.
Unfortunately, for dinner I had a microwavable Marie Callender dinner. I had to go straight to work after class and got home late, so this was the easiest to do. After my frozen dinner, I had a handful of grapes- probably one of my favorite snacks.
So, I think if it weren't for the University Club meal, I wouldn't have eating very well at all.

This morning I had a bowl of Raisin Bran cereal, with sugar sprinkled on top of course. For a small lunch before class, I had a taco from last night's dinner left-overs. This was fine with me because there are a lot of left overs and I know that I need to eat them. After class I met Timmy at McAlister's. McAlister's is one of our favorite places to go- we feel that it has fairly healthy types of food which is fast and inexpensive, plus the sweet tea is the best! I ordered half a club with half of a spud. I added butter and salt and pepper to my spud. Oh, and the best part, I had two pickles because it came with one, and Tim hates pickles so I got his as well. I enjoyed this meal because I like going somewhere to eat every now and then.
As dinner tonight, I ate the left over salad from last night. It was still very good the second time! I drank water with this meal.
I feel that today's meals were very good. I used to despise left overs, but that was when I was younger and not buying or making any of my food. So, even though they were left overs, I enjoy eating them, especially knowing that I am not wasting food, therefore money.

Today I feel that my eating habits have finally gotten a little better. This class has inspired me to eat differently, it has just been a matter of being able to do so more often.
Before class, all I had was a tomato and mayonnaise sandwich- one of my favorites! The bread was store bought white bread, and the tomatoes came from the Commissary at Ft. Rucker where I'm from. Anytime I go home to Ozark, my family is military so I stock up on groceries at the Commissary on Post. It's much cheaper, and I think the produce is much more fresh and well-kept.
After class, Tim and I began planning for dinner- we knew we wanted to cook. I already had a pound of beef thawing out, so we tried to think of something to do with it. I also knew that I wanted to check out Mana. Once we got there and started looking around, it all came together. We found the spices and decided to make tacos with their taco seasoning. We also grabbed a bag of fresh salad mix from Snows Bend Farm. Our tacos consisted of the ground beef with taco seasoning, store bought flour tortillas, iceberg lettuce, and chopped tomatoes. We were going to use the leftover cheese from our pizza the other night, but we forgot it!
On the side, we had a salad. It included a cucumber, diced tomatoes, and carrots which I bought from Winn Dixie and were labeled "organic." I also added a little bit of Italian dressing to mine. I don't usually like any type of salad greens besides iceberg, but this salad (with the Snows Bend greens) was my favorite part of the meal. Oh, and I drank water.
We ate this meal at my dinner table. Neither of us over ate, and we both commented on how good we felt! I guess our judgment as when to stop was right on, haha. I know that my eyes are usually bigger than my stomach because before we ate, I said that I would probably have two tacos, and I actually only had one (thank goodness).

This morning I had two medium sized pancakes. They were made by my boyfriend form the same store bought, easy mix as before (I really need to get my dad's scratch recipe). I drank a glass of orange juice with this meal. We also had sliced fruit (from Winn Dixie), pineapple and strawberries. He and I ate our breakfast at the dinner table.
I didn't have much of a lunch, my boyfriend and I spent many hours cleaning out his car...it was BAD. When we were done, of course, I was quite hungry. We were tired and just quickly made a frozen pasta melody. It was something Tim bought, but it actually tasted good for being a packaged, frozen meal. However, I still wish we could have taken time to cook. I drank water with it, and we ate while watching a movie together in the living room.

Today I did not eat breakfast, I slept in and the first thing I ate was more like lunch. I had a hotdog with ketchup and Sunchips. I ate this at my boyfriend's apartment, just before we headed out to the pool. After we came in from the pool, we decided to start panning for dinner. We enjoy making pizzas, so we figured out what we needed in order to cook one. Our pizza ended up having most of the ingredients we usually choose: the sauce (just a store bought spaghetti mix), cheese (block of mozzarella, graded), sliced squash and zucchini, salt and pepper to top. We bought the dough from Mellow Mushroom. We ended up eating around 8:00. We ate the pizza together while playing a new game that we bought, so this meal we enjoyable for many reasons.
Later that night I had a bowl of oatmeal as a snack. This was at my boyfriend's as well. I wanted something on the sweeter side, but didn't feel like candy or ice cream-like sweets.
Not having anything to do today, I can tell that I ate more of what I wanted, and I took the time to make it. After my brother's graduation, the group went out to lunch. My sister-in-law, Amber, planned a nice afternoon at a place in Auburn called Cock of the Walk. This restaurant has a Southern theme, mostly serving traditional Southern foods, as well as a nice atmosphere with a lake and beautiful yard and several animals including a peacock. Amber ordered two food platters which offered fired catfish, grilled chicken, french fries, hushpuppies, and baked potatoes. I had about 4 of the catfish (they were small), two hushpuppies, and some french fries. Also, as sides I had a serving of coleslaw (I guess I really love the stuff).
For dessert we had celebratory chocolate cake with chocolate icing. I only had a few bites because all of that chocolate is too much for my taste, and I was still helping myself to the catfish and coleslaw!
I REALLY enjoyed this meal. Once again it was with family which is always the best, and Southern food is by far my favorite! The environment was a nice bonus- afterwords we spent time on the deck of the restaurant feeding the fish and turtles.
That night, I had already arrived back in Tuscaloosa. Tired from the eventful day and driving, I decided to make a Marie Callender microwave dinner. I keep these around for moments just like this- something quick but this brand is still good.
So, I am noticing so far that for at least one meal a day, I have to do something quick and easy. I guess I wish this were different, but I actually don't think it's too bad considering my lifestyle and those of most Americans today (on the go).

For a late breakfast, I had pancakes (around 10:40). I ate about 2 with plenty of maple syrup, milk (D, whole) to go with. The Pancakes were made from a store bought mix that my boyfriend bought, he made them as well. I ate them alone, however, because my boyfriend had to be somewhere else at the time.
After class I had an extra late lunch. I leaving town with my boyfriend to head to Auburn for my brother's graduation, so I picked up a salad and a random side of coleslaw to eat on the way. Yes, I ate in my car while my boyfriend drove. I would have liked to eat pretty much any other way, but we had to hurry and get to Auburn to eat dinner with the party of people who were waiting.
I chose a salad because they are light and I knew I'd be eating dinner shortly, also, I was kind of craving one at the time. I think I chose to add the coleslaw for an interesting reason- I like to eat numerous things in one meal. I enjoy having a few sides or options as I eat. So the small side of coleslaw was a bonus, haha.
When we finally arrived in Auburn, we all immediately headed out to dinner. We went to a Mexican restaurant, always a favorite food of mine. However, we did not get to eat until around 8:30 because the place was packed and the hostess kept moving larger parties of people in front of ours.
I ordered a chicken burrito with a side of rice and beans. Rice and beans are a fav. of mine when eating Mexican food. I like to mix them together. The burrito was alright, but the chicken was a little too dry.
Despite the fact that I ate my lunch in the car, I feel that today's meals were quite enjoyable, I was able to eat dinner with many people, mostly being my own family, and it was an added pleasure that we were celebrating my brother's graduation from getting his Masters degree.
I notice (but have always known) that I do not eat a lot of meat. This is not an intentional choice, oh, I do love the occasional steak, I just naturally enjoy veggies the most. I have to really be in the mood for meat to order/cook it.

I chose to eat this because I still had some leftover tuna from the previous day and it would be east to make.
After class I had a snack. Baby carrots (about a handful, store bought) with fat free ranch dressing as dip. This is one of my favorite snacks. I do have a stash of pretty unhealthy snack products and "fake foods" so this snack is on the healthier side of the wide array of snacks I usually eat. Plus, I really do love fruits and veggies more than any other foods. However, what I had to follow this is quite the opposite- a Moonpie! Moonpies are my weakness...

I had a fried fish fillet covered in a shrimp bisque (some kind of shrimp-like cream/sauce with corn and potatoes) with a side of green beans and a roll. I had water to drink. I chose this because I have had it before and I knew I enjoyed it. I enjoy eating out and probably do about once a week on average.

Subway 6" (turkey, tomato, lettuce, salt and pepper, pickles, small Dr. Pepper to drink. Around 4:15)- right after class I had to be at work at 4:30. I didn't have anything before class since I've been a little sick and my appetite hasn't been the same. So, by this time, I was pretty hungry. I settled for Subway because it is right next door to where I work. I knew I could quickly eat something, then be at work in no time. Also, I don't normally like to drink soda, but I knew that I could benefit fro the sugar since I was about to work and not be able to eat anything else for a while.
After work (I am a server at Bento Japanese) I had food from the restaurant. Fried rice (egg and vegetables mixed in) with sauteed vegetables in a Teriaki sauce, and steamed edamame (soy beans). I also had a side salad (iceberg lettuce and carrots) with Bento's "mystery" dressing. I ate this because it was convenient since I was already at work, and I really do LOVE Bento's food! I had my dinner late, around 9:30 when I got home, while sitting next to my boyfriend who came over.
Later, as dessert, I had a Banana.

I chose to eat this for many reasons: it is quick and easy to make and I can make a enough to have later or the next day, also, I consider tuna to be a healthy food. Most importantly, I like it!
I ate my sandwich by myself while watching TV in my living room.
Later, I had a bowl of Honey Comb cereal. I had it with D, whole milk. This was basically a sweet snack for me. I love cereal a lot, and probably have a bowl a day. It's nice that it's easy, and it almost always cures my craving for something sweet (when I eat sugary cereals, that is
Banana (late, 11:00)- after coming home from work and doing the class reading/paper, I finally had "dinner." I had a banana first because I was craving fruit, which happens often throughout my day.'
Next, I had a bowl of Ramen Noodles- not my favorite choice at all. When I eat Ramen, it is usually my last resort for food. It was so late at night and I needed something quick. Plus, I have been a little sick (slight cold), and I really wanted just a Campbell's chicken noodle soup, so this was the closest thing I had (haha).
For dessert i had a couple of handfulls of grapes. Once again, I love fruit! I ate these while sitting on my bed and talking to my boyfriend on Skype.
Looking back on this day alone, I see that I was primarily focused on eating foods that were quick and easy to prepare. The Ramen was packaged, the tuna had been in a can (in water), and the fruit was not especially organic. But today being the first day of classes, plus I was scheduled to work, my eating habits were a little off.
