5/24

This was another day where I did not eat before class. Luckily (especially since we went to the farms) it did not seem to effect how I felt. I think that the water I kept drinking during the trip might have saved me.
After the trip I went home and actually ate the leftover Iguana Grill food that I had. It wasn't much, so I also had a tomato and mayonnaise sandwich. I ate this alone in my apartment. At 6:00, I went to work.
After work, Tim and I went over to our friend's (Kristin and Marcus) apartment for dinner and to hang out. Kristin made a Broccoli and cheese casserole with rice which was very good. I drank water with it. We all ate together while talking and playing games. We are all really good friends, and being couples, we tend to get together a lot. Tomorrow night, they will be coming over to my place to eat and hang out with us again. This is probably what I look forward to the most- cooking with my boyfriend for our best friends.

On this day, I had an early lunch with my boyfriend and one of our friends. Our friend, having traveled from Birmingham to see us for the weekend, suggested that we all go get lunch on his way out of town. So, we went to Iguana Grill. I really like Iguana Grill as far as Tuscaloosa Mexican restaurants go. I ordered one taco, one burrito (just beans), and rice and beans on the side. I drank water. I also munched on the chips and salsa while waiting. I thought this meal was good… I always enjoy going out to eat with people.
For dinner I had my Bento leftovers from the night before. For something sweet after, I had a Moonpie. I ate these alone at my apartment.

I noticed that his day's meal was not particularly healthy- a lot of fast restaurant food. I wonder that if I had noticed this while choosing what to eat, if I would have changed my mind, hm.

5/22

On this Saturday, I did not have any kind of breakfast. The first thing I ate (around 11:00) was a tuna fish sandwich with Sunchips. This was mostly a pre-pool snack since my boyfriend and I had plans to be by the pool for the afternoon. While at the pool, I sipped on a mixed drink I made- pineapple Malibu, strawberry champagne, orange juice and pink lemonade. This is what I usually make for pool days. It’s tropical and fits the scene well!
Before I had to go to work, I quickly munched on a Pop Tart. After work, I ordered Bento to go. My boyfriend came into Bento with one of our friends and ate, so I decided I’d get Bento as well. I love Bento so much but am trying not to eat it too often… I felt like this was an excuse! Plus, I needed something quick for dinner that night that I wouldn’t have to make because Tim and I were having friends come over to his apartment to hang out. So, I ate my Bento Teriyaki Vegetarian dinner at Tim’s apartment just before people started to arrive. The dinner consisted of zucchini, mushrooms, broccoli, and onions sautéed in a teriyaki sauce, edamame, and fried rice and shrimp sauce. Plus, it came with a soup and salad. I drank a Kronenbourg beer with it. No complaints about this meal- it’s Bento!

On this day, I woke up and had a Pop Tart. I ate it by myself while watching tv.
For lunch I made another fish fillet with a baked potato. The Potato was from Wal Mart (not sure of anywhere before that), and I added butter, and salt and pepper to it. I enjoyed this meal, it was very light but just enough for how I was feeling at that time. I ate it alone (1:00), once again, watching tv. I drank pink lemonade drink mix with it.
For dinner I met up with my friend Marion (7:00). We met at Buffalo Phils on the strip. This is not my favorite restaurant, but she and I used to go there often so we decided to do it again since she might be leaving soon. I had the chicken winger (just chicken fingers) dinner with fries and a side of broccoli and cheese casserole. I drank water.

I’d say this was a good “food day.” For the first half of the day I was able to just hang around my apartment, getting things done and fixing food for myself when I felt like it. Then, of course, dinner with a friend is always nice.

5/20

As usual, I did not have anything for breakfast on this morning, and I also did not eat lunch until very late. It was more like an early dinner. I slept in longer than usual because I had a bad headache. I finally felt like eating around 2:00. I made myself lunch- black eyed peas (canned), one Tilapia fillet (frozen, from Wal Mart), with a salad made from the rest of the mixed greens from Snows Bend Farm. I just heated the peas in a pot, added salt and pepper. I baked the fish in the oven. I added sliced carrots and Italian dressing to my salad and was a little disappointed that I didn't have anymore tomato to add as well! I was glad that I had the time to "make" this meal, even though the black eyes peas were canned. It was a much better option than a frozen dinner.

I had work from 4:30-10:30, but luckily my boss fed us tonight after we closed. So, I had teriaki chicken, edamame, and fried rice with Bento's shrimp sauce. I was VERY please with eating this mostly because (as I have said) I love Bento's food, it was free, and it meant I wouldn't have to make something quickly when I got home. While at work I drank watered down sweet tea. I wanted sweet tea just to help me stay alert and added water to it so it wasn't SO much sugar.

5/19

Before class I had a tomato and mayonnaise sandwich. Made with the usual- same tomato, kraft mayo, salt and pepper and white bread. I also had a Pop Tart before it, to help me sweet-something craving. I drank a glass of whole, D milk with it.
I also ate the wonderful salad and meal that our class had with Chef Dave at University Club! Most definitely the highlight food of my day. It was especially nice to be eating with classmates, as we were all exploring and learning about the benefits of local foods.
Unfortunately, for dinner I had a microwavable Marie Callender dinner. I had to go straight to work after class and got home late, so this was the easiest to do. After my frozen dinner, I had a handful of grapes- probably one of my favorite snacks.
So, I think if it weren't for the University Club meal, I wouldn't have eating very well at all.

5/18

This morning I had a bowl of Raisin Bran cereal, with sugar sprinkled on top of course. For a small lunch before class, I had a taco from last night's dinner left-overs. This was fine with me because there are a lot of left overs and I know that I need to eat them. After class I met Timmy at McAlister's. McAlister's is one of our favorite places to go- we feel that it has fairly healthy types of food which is fast and inexpensive, plus the sweet tea is the best! I ordered half a club with half of a spud. I added butter and salt and pepper to my spud. Oh, and the best part, I had two pickles because it came with one, and Tim hates pickles so I got his as well. I enjoyed this meal because I like going somewhere to eat every now and then.

As dinner tonight, I ate the left over salad from last night. It was still very good the second time! I drank water with this meal.

I feel that today's meals were very good. I used to despise left overs, but that was when I was younger and not buying or making any of my food. So, even though they were left overs, I enjoy eating them, especially knowing that I am not wasting food, therefore money.
